I'm going to try a new column and see how it goes. Too much politics all the time is wearing me down. We cook dinner almost every night at my house. We sit down at the dinner table and eat it without the TV on. We also almost always have a fresh from scratch meal, not frozen pizza.
Tonight's Bill of Fare:
Grilled steelhead with tequila lime butter
Fresh French Green Beans Sautéed in Soy and Olive oil
Organic brown and wild rice pilaf
Beer selection: Samuel Adams Brown Lager
After dinner: Green Tea with Lime
The steelhead, green beans, and organic brown rice, and organic broth are all from Costco. The wild rice mix is from Wild Oats / Whole Foods.
I make my tequila lime butter with real butter, about 2 tbsp, juice and zest from half a lime, and about an ounce of tequila. I shake some Emeril's Fish Rub on, then I marinate for about an hour before grilling. I like Cosco's Kirkland Organic No Salt Seasoning for the vegetables. For the rice I mix 1/2 cup organic brown rice and 1/2 cup wild rice mix and 2 cups organic free range chicken broth, bring to boil, reduce and cover. I completely forgot the salad tonight. Oh, well I was starving.
